We’ll get into the nitty-gritty of cheese defects, from awkward textures to flavor flops, and how you can troubleshoot these problems like a pro. 12:00 – Lunch 1:00 – Grading versus Judging Is it a gold-medal Gouda or a passable cheddar? We’ll clarify the differences between grading and judging (it’s more than just semantics!) and walk through the terminology, scoring systems, and how to interpret contest feedback without taking it personally. Images included to keep it fun. 2:00 – Bioprotective Cultures Spoilers may be great for movie trailers, but not so much for cheese. This session explores bioprotective cultures—your cheese’s best friend in the fight against spoilage. Learn how they can boost both safety and flavor in your products. 2:30 – Evaluating Samples Here’s where we put your palate to the test. Roll up your sleeves and get ready to evaluate some samples. Don’t worry, it’s not a pop quiz, but you’ll be using your new-found knowledge to identify defects and appreciate quality. It’s all in good taste (pun intended). 3:00 – Q&A Time to ask those burning cheese-related questions!
